One of the kids FAVORITE things for dinner is breakfast! My ten year old loves to make pancakes.
I went to a scrapbook retreat a few years ago and discovered my new love – Baked French Toast. YUMMO!
1 1lb loaf French Bread, cut up
8 Eggs
2 c. Milk
1 c. Half and Half
2 tsp. Vanilla
1/2 tsp. Cinnamon
3/4 cup Butter
1 c. Brown Sugar
2 T Light Corn Syrup
Butter a 9×13 baking dish. Place the slices of bread in the bottom. In a large bowl, beat together eggs, milk, half and half, vanilla and cinnamon. Pour over bread slices. Cover and refriderate overnight (or if you want if for dinner, do this first thing in the morning and the pull out when ready to cook for dinner.) The next morning (or later that day), preheat oven to 35o°. In a small saucepan, combine butter, brown sugar and corn syrup; heat until bubbling. Pour over bread and egg mixture. Bake in preheated over, uncovered, for 40 minutes.
ENJOY!
Now, this feeds my family of 8 quite well. For a smaller family you can cut the recipe in half, or just invite some company over for breakfast for dinner!

Dinner leftovers for breakfast – now that is a new one for me. I think I’d have to wrap my brain around that one a bit – but why not? If you can do breakfast for dinner why not the other way around!
